Chocolate Chip Plantain Bread

Plantain is one of my favorite ingredients because it is naturally sweet but not in an overwhelming way. It’s also a great source of fiber. I used olive oil instead of butter in this recipe as a way to reduce saturated fat. I like to eat a slice of this bread in the morning with a smoothie or tea. It is also a great snack for when you are looking for something that is both filling and sweet.

Ingredients

  • 2 cups all-purpose flour

  • 3/4 cup of brown sugar

  • 1/4 teaspoon salt

  • 1 teaspoon baking soda

  • 1/8 cup of chopped chocolate chips

  • 1/2 cup of olive oil

  • 2 ripe plantains

  • 2 eggs

  • 1 teaspoon vanilla

Directions

  1. Cut the plantains and place them in a pot and boil for 10-15 minutes. You can either boil the plantain with or without the skin. Boiling it without the skin causes the plantain to expand more and it may become more watery.

  2. Combine the flour, baking soda, salt, and brown sugar into a bowl and mix together.

  3. After the plantain has boiled and cooled down, remove the skin and mash the plantains together. Add the eggs and vanilla and mix it all together.

  4. Add the plantain mixture to the flour and mix. Add the chopped chocolate pieces and mix it into the dough..

  5. Heat the oven to 400 degrees Fahrenheit. Spray the baking pan lightly with oil and pour the dough mixture into it.

  6. Cook for 30 minutes in the oven. You should be able to pierce a knife through the center of the bread and have it come out clean when it is ready.
