Baked Plantain chocolate puff puff

Puff puff is one of my favorite Nigerian desserts because it is so soft and warm. The traditional way of making it involves deep frying. I used a cast iron baking pan and sprayed oil on it in order to reduce the amount of oil I used. Adding boiled plantain to the flour helps increase the nutrient density. The chocolate chips add a special surprise with each bite. This is a great snack or dessert to eat.

Ingredients

  • 2 cups all-purpose flour

  • 1¼ cups water

  • 2 1/4 teaspoons yeast

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla

  • 1/4  teaspoon salt

  • 1/2 cup brown sugar

  • 1/2 of a dark chocolate bar (about 1 ounce)

Directions

  1. Cut the plantain and place it in a pot and boil for 10-15 minutes. You can either boil the plantain with or without the skin. Boiling it without the skin causes the plantain to expand more and it may become more watery.

  2. Combine the flour, cinnamon, salt, and brown sugar into a bowl and mix together.

  3. Combine the yeast and a small amount of warm water in a separate bowl to allow the yeast to proof for about 5 minutes. If you are using rapid rise yeast then you can skip this step and add the yeast directly to the dry ingredients.

  4. To make the plantain puree, add the boiled plantain, vanilla, and water to a blender and blend it. Allow the plantain to cool for a few minutes before adding it to the blender. You want to make sure that the puree mixture is warm but not too hot before adding it to the flour. Liquids that are too hot can decrease the effectiveness of the yeast.

  5. Add the puree mixture to the flour and mix. Chop up the chocolate bar and mix it into the dough..

  6. Cover the mixture and allow it to set at room temperature for at least an hour.

  7. Heat the oven to 400 degrees Fahrenheit. Spay the cast iron pan lightly with oil and set it in the oven while the oven is preheating so it can get hot.

  8. Use a spoon or ice cream scooper to put the dough into each hole in the cast iron pan.

  9. Cook for 20 minutes in the oven. You may want to flip each side and cook for an additional 3 minutes if the bottom side hasn’t browned enough.
